1. Preheat the oven to 350 degrees F. Grease an 8×8 in. square baking pan with cooking spray.In a large bowl, combine the eggs, zucchini, oats, baking powder, and cinnamon.Stir in the coconut milk, truvia, sunflower butter, and vanilla.
2. Pour into the prepared pan.For the topping, combine all of the ingredients together until a crumbly mixture forms.Evenly distribute the mixture over the top of the batter.
3. Bake for 35-40 minutes, or until a toothpick inserted into the center of the bread comes out clean.
4. Let cool slightly, then cut into bars.
