Taco Baked Ziti with Creamy Avocado Sauce

What you need

avocado sauce (recipe below)
2 large avocados (peeled & de-seeded)
½ tsp black pepper
1 (15 oz) can black beans (drained & rinsed)
2 cups cherry tomatoes (halved)
2 cups chicken broth
4 oz can diced green chilies
1 lb. ground beef (or turkey)
1 tsp ground coriander
1 tsp ground cumin
1 lime (juiced)
½ tsp kosher salt
½ cup pepper jack cheese
1 cup sour cream
2 tbsp taco seasoning (click link for homemade recipe)
1 lb. ziti pasta

How to do it

1. Preheat oven to 400°.Bring a large pot of water to boil and cook the ziti pasta 8-10 minutes, or until al dente.

2. Drain and set aside.While the pasta is boiling add the ground beef to a skillet over medium heat. Cook through, drain off any grease, then add the taco seasoning, cherry tomatoes & black beans.

3. Combine well, then simmer 5-7 minutes on low heat.Prepare the avocado sauce by adding all ingredients to a blender or food processor and blending until creamy.

4. Combine the ground beef and pasta, then pour the avocado sauce over the top.

5. Mix everything together, then transfer to an oven-safe baking dish.Sprinkle the cheese over the top.Cover loosely with foil and bake 15-20 minutes.
