Slow Cooker Vegetarian Pot Roast

What you need

1 cup baby carrots
4 celery stalks, sliced into small pieces
1 cup mushrooms, sliced
Slow Cooker Pot Roast Sauce (I use Campbells)
4-5 red potatoes, washed and cut into quarters
Gardein Beefless Tips (in the freezer aisle with the health-food or other meat-less foods)
1 yellow onion, chopped roughly

How to do it

1. Place all ingredients in a slow cooker. Stir to be sure it is all combined.Set on low for 6 hours.

2. Serve over cooked quinoa or brown rice.
