Savoury Parmesan tartlets

What you need

tiny capers, optional
200g soft cheese
7 cherry tomatoes, halved
few chives
dill sprigs
1 egg, beaten with a good pinch of flaky salt
3 tbsp finely grated parmesan
375g ready-rolled shortcrust pastry sheet
85g smoked salmon

How to do it

1. Heat oven to 200C/180C fan/gas

2. Rollout pastry sheet on a lightly floured worksurface to a large oblong measuring 30 x40cm. Stamp out 24 rounds with a 6.5cmround cutter, then carefully place them infairy cake or muffin tins to form tiny tarts.Prick the bases with a fork.

3. Brush the pastry with the beaten egg,scatter with the Parmesan and bake for10-12 mins until golden. Scrunch thepastry trimmings together, then re-rolland stamp out 4 more rounds. Glaze andbake as before. When all the pastry casescome out of the oven, roast the cherrytomato halves on a baking tray for 8 mins.The cases will keep in a tin for up to3 days or freeze for 3 months. Thetomatoes will keep in the fridge for 24 hrs.To serve, fill some cases with ateaspoon of houmous, a cherry tomatoand a few snipped chives. Fill others withsoft cheese, a twirl of salmon, dill andblack pepper and capers, if you like.
