What you need

10 ounce package baby spinach
1 tablespoon butter
1 tablespoon extra-virgin olive oil
Salt and freshly ground black pepper
1 small shallot, chopped

How to do it

1. Heat a large skillet. Melt the butter, then add the olive oil and chopped shallot. Cook until soft, about 3 minutes.

2. Add the spinach and cook, stirring, until spinach is wilted. Season with salt and pepper and toss again.

3. Serve warm.
