Italian Sausage Soup

What you need

3 cups baby spinach
1/2 tsp black pepper
2 tbsp butter
6 cups chicken broth
12 oz Reames Frozen Egg Noodles
2 tbsp flour
2 tsp minced garlic
1 lb ground Italian sausage
2 cups half-n-half cream
1/2 cup diced onion
1/2 cup shredded parmesan cheese
1/2 cup diced red pepper

How to do it

1. Brown the Italian sausage in a large pot.

2. Drain the excess fat and set the sausage aside.Using the same pot, return it to the heat and melt the butter.

3. Add the diced onions, diced red peppers, and garlic.

4. Saute over medium heat for 4-5 minutes.Sprinkle with flour and stir to coat. Cook for about one minute, stirring constantly. Stir in the chicken broth and bring to a boil.Once the soup is boiling, stir in the Reames Frozen Egg Noodles. Return to a boil and cook for 20 minutes, stirring often.Stir in the sausage, cream, and spinach. Cook for several minutes until heated through.

5. Add black pepper to taste and serve with shredded parmesan.
