Gluten-Free Tuesday: Chocolate Chip Cookies for Two (or One)

What you need

1/8 teaspoon baking soda
2 tablespoons softened butter
about two tablespoons chocolate chips (more or less to taste)
1 teaspoon cornstarch
2 tablespoons dark brown sugar
1 tablespoon beaten egg
1 teaspoon granulated sugar
3 tablespoons white rice flour
1/8 teaspoon salt
3 tablespoons sweet rice flour

How to do it

1. Preheat oven to 350°F. Line baking sheet with parchment paper. In small bowl, whisk together white rice flour, sweet rice flour, cornstarch, baking soda, and salt. In another small bowl, cream together sugars and butter until a thick paste forms. (Use a wooden spoon or handheld mixer. This batch is too small for a stand mixer.)

2. Add the egg. Beat until smooth.

3. Add dry ingredients.

4. Mix until a dough forms.

5. Add chocolate chips. Stir to combine.

6. Scoop dough, about one generous tablespoon each, onto prepared baking sheet.

7. Bake until golden brown, about 10 minutes.

8. Remove pan from oven. Allow cookies to cool on the pan for two minutes. Using a metal spatula, transfer cookies to a wire rack to cool completely.
