Cheesy chicken bake with new potatoes

What you need

85g garlic & herb soft cheese
8 chicken thighs, skin on
1 garlic clove, crushed
500g new potatoes, halved
olive oil, to drizzle
large pinch caster sugar
6 thyme sprigs, leaves stripped from 4
4 medium tomatoes, halved

How to do it

1. Heat oven to 200C/180C fan/gas 6.Carefully lift the skin on the chickenthighs and spread the soft cheesebetween the skin and flesh. Sit thechicken in a roasting tin, skin-side up,and surround with the potatoes andhalved tomatoes, cut-side up.Scatter the tomatoes with the garlicand a light sprinkling of sugar (this helpsto bring out their natural sweetness).Scatter the thyme leaves and sprigs overthe tin, season and drizzle with oil. Roastfor 45 mins until the chicken and potatoesare cooked through with crisp, golden skin.
