Caramelized Shallot and Goat Cheese Mashed Potatoes

What you need

4 ounces goat cheese, brought to room temperature
1/2 cup heavy cream
2-1/2 lbs potatoes
1/2 teaspoon salt
3 large shallots, thinly sliced
4 tablespoons unsalted butter, divided
1/4 teaspoon white pepper

How to do it

1. Place in a large pot and cover with cold water.

2. Add about 1 teaspoon of salt, bring to a boil and cook for 10 to 15 minutes until the potatoes are tender when pierced with the tip of a knife.
