Bright and Lemony Blueberry Muffins

What you need

1 teaspoon baking powder
¼ teaspoon baking soda
1 cup blueberries, fresh
¼ teaspoon cinnamon
1 medium egg
½ cup fat free milk
1 tablespoon flour
1 small lemon , juiced
1 tablespoon lemon zest
1 tablespoon oil
¼ cup sugar
½ teaspoon vanilla
¼ cup whole wheat flour

How to do it

1. Preheat oven to 400 and spray muffin tins with cooking spray.

2. Combine dry ingredients and make a well in the center.

3. Add wet ingredients and stir to combine. You want to just combine, not stir until very smooth.

4. If you are using frozen berries, thaw and then dust lightly with flour to keep berries from sinking to the bottom. Gently stir in blueberries.
