Beer and Lime Marinated Chicken in Tortilla Bowls with Mango Salsa

What you need

1 medium avocado, chopped
4 ounces beer
8 tablespoons low fat cheddar cheese
Chicken Marinade
1 pound chicken breast, cubed into bite sized pieces
1 ½ tablespoons chili seasoning
¼ cup cilantro, minced
1 tsp cumin
1 tablespoon jalapeno pepper , minced
½ small lime, juiced
1 medium lime, juiced
1 large mango, finely diced
Mango Salsa
1 Tbs olive oil
½ small red onion, finely chopped
1 pinch red pepper
2 large Roma tomato, seeded and finely chopped
Tortilla Bowl
4 medium whole wheat tortillas

How to do it

1. Preheat the oven to 450 degrees.Follow ehow.instructions to make a tortilla bowl.

2. Combine beer, lime juice, chili seasoning, cumin, red pepper, and chicken in a bowl. Allow to marinade for 30 minutes.

3. Combine mango, tomatoes, red onion, avocado, cilantro, jalapeno and lime juice in a medium bowl. Salt and pepper to taste.In a large non-stick skillet heat olive oil.

4. Remove chicken from marinade and cook for 15 minutes until chicken is no longer pink inside.In each tortilla shell, layer chicken, 2 tablespoons cheese, salsa and sprinkle of cilantro.
