Balsamic Glazed Loaded Baked Sweet Potatoes + a Giveaway

What you need

6 slices bacon, cooked and crumbled
1 C balsamic vinegar
4 oz. blue cheese, crumbled
1/4 C brown sugar
1 tbsp butter
2 green onions, chopped
salt, pepper, olive oil
4 medium sweet potatoes

How to do it

1. Preheat oven to 400 degrees.

2. Place potatoes on a baking sheet.

3. Drizzle potatoes with olive oil and sprinkle with salt and pepper.

4. Bake for 45 minutes or until they pierce easily with a fork.

5. Combine vinegar and sugar in a small saucepan and bring to a simmer. Continue to simmer for about 15 minutes or until it has thickened enough to coat the back of a spoon.

6. Remove from the heat and stir in butter. Slice potatoes down the center and top with bacon, cheese, onions and drizzle with the glaze.
